Gluten free “pancakes”

I’m still waiting to hear back from my doctor on whether or not I’m allergic to gluten, but in the meantime I’m avoiding gluten (for the most part). I feel better when I do, so I’m rolling with that.

I made these pancakes and they taste really good guys!

Here’s what you need…

  • One banana – mash it up with a fork
  • Two eggs
  • Dash of baking powder – like 1/8 tsp
  • 1/8 tsp vanilla extract 
  • 1/4 cup chocolate chips

Whisk it up and pour it out like pancakes on a griddle. Cooks really quickly. Like a min on each side

I topped mine (about 4 small pancakes) with Kerry gold butter and maple syrup and some more chocolate chips (because why not?!)
